why authorities matter

The mint authority can create new tokens out of nothing. The freeze authority can lock any token account forever. Both are risks while they point at a key someone controls.

Revoking sets the authority to null on-chain. This is permanent. Rotate instead when a different key must keep control, for example a multisig.
